Super Easy VEGAN pumpkin pie… Let the thoughtful feasting begin!

Easy Vegan Pumpkin Pie

This is one of the goodies I’ll be bringing to our annual Thanksgiving feast at the home of our dear friends, The Watson Twins… very exciting!  Serves 6 to 8 very lucky people.

What You Need:

  • 2 cups well-baked, mashed butternut squash or sugar pumpkin or one 16-ounce can of pureed pumpkin
  • 3/4 cup silken tofu
  • 2/3 cup natural granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice mix
  • One 9-inch good-quality natural pie crust

What You Do:

  1. Preheat the oven to 350 degrees. Combine the pumpkin or squash pulp in a food processor with the remaining ingredients, except crust. Process until velvety smooth.
  2. Pour the mixture into the crust. Bake for 40 to 45 minutes, or until the mixture is set and the crust is golden. Let the pie cool to room temperature. Cut into 6 or 8 wedges to serve.

The (ECO) Beauty Biz: YAY for John Masters Organics Sea Mist Spray!

In the wake of our much celebrated Green With Giveaway John Masters Organic skin care set, celebrity beauty stylist, Vanessa Rose Price delves into JMO even further…

As a hairstylist, I am constantly asked for hair advice. “Vanessa, what’s the best conditioner for my hair?” “Vanessa, should I cut bangs?” (Deana, you know it’s true). “Vanessa, what’s a good hair spray?” But the one I get the most is “Vanessa, where can I get a sea salt spray for my hair?” No joke.

2nd Hand Spotlight: Hidden Treasures in the deep Valley

Working as a producer I can be asked to find random locations on the fly to use for any show. Currently I’m working on a show where I needed to find hidden locations you may not otherwise look for or even seek out while driving around LA.  Lucky for me, I was not limited on my choice of locations and so when I saw a sign reading “ANTIQUES” off the 101 freeway, I immediately took the next exit, which led me to Sandy.
Sandy is the owner of Antiques, a small antique shop located in Agoura Hills off of exit 35 for Chesebro Road. Sandy opened her little shop years ago and loves what she does. As soon as you walk in the door Sandy is there to greet you with a wealth of antique knowledge and tell you great stories of how she acquired some of her unique items.
Although the shop may be small, do not undermine the greatness of this place. You can find vintage belt buckles, 1960’s style purses, and jewelry from all different era’s.
Lovely accessories from bygone eras
My two favorite finds were an old school wine bottle opener and also 2 vintage cameras. All of the items I looked at where in good condition and Sandy will reduce the price if there is even the slightest glitch. Not only will you find everyday wearable items but Sandy also has an abundance of home furnishings from record players to rocking chairs you can find almost anything you want. And if you don’t see something you were hoping for, let Sandy know and she can reach out to her buyers and try to find whatever it is you want.
Seeing as the holidays aren’t too far away, Sandy’s Antiques may just be the place for you to buy some great one of a kind gifts for those special people in your life. You can find ANTIQUES at 28856 Roadside Drive, Agoura Hills, CA.
And if you’re really feel adventurous and loving the Antique finds, you should head to Country Antique Fair Mall in Saugus, right outside of Santa Clarita.  This antique mall is over 12-thousand square feet! Candy runs this mall most of the days. Much like Sandy from Antiques, she is very friendly and willing to help in any way. I’ve decided antique shops may employ some of the nicest people I’ve met in LA who really love what they do. It’s quite a treat.

The Accidental Gourmands: Faux Pho

Pho is one of my favorite soups, I am always on the quest for the perfect bowl of pho, wherever we go.  With it’s rich broth and fresh garnishes it is both warming yet refreshing.  Alas…once becoming vegetarian, it was off the list.  A few years ago it was rare to find a vegetarian version at Vietnamese restaurants but it’s becoming more common.  Even thought they offer it, it’s nothing compared to the spicy rich flavor of it’s meaty counterpart.   Generally it’s just some vegetable broth with tofu and basic veggies, a lazy attempt to pacify us vegetarians.  Hence the challenge to perfect our own pho broth minus the meat became clear.   Here it is, so warm with it’s rich spices and topped with fresh basil and lime, ooohhh so good!

1 large onion, 3/4 chopped for the broth and 1/4 large slices for the soup
3 cloves of garlic, peeled
1 tsp whole coriander
5 whole cloves
Dash of cinnamon
2” piece of ginger root, large chunks
1 Tbl soy sauce
1 Tbl olive oil
3c. Vegetable broth
3c. Water
1 carrot, cut in large chunks
1 package tofu
1 package Rice noodles, either thin or fettuccini style
3 sprigs fresh Basil
1 Jalapeño, fresh and sliced
Hoisin sauce
Sriracha chili sauce
1 Lime, sliced in wedges
3 scallions chopped

Sauté the 3/4 chopped onion and garlic cloves until brown, this gives the broth a rich brown color and flavor. Add coriander, cloves, cinnamon, and ginger root sauté for about a minute to bring out the flavor in the spices.  Add the vegetable broth, water, and soy sauce, simmer covered for 20 min. Strain the broth, add carrots, tofu, and remaining 1/4 of onion to the strained broth and simmer for 5 min. You can add other fresh veggies such as snow peas and mushrooms if you like.

Meanwhile prepare noodles per package instructions.

Place cooked noodles in a bowl, ladle over with the broth, veggies, and tofu. Top with scallion, jalapeño, a wedge of lime, and a sprig of basil. Add sriracha and hoisin to taste.

Abby Lutz & Shane Walsh

Switching gears from the fast-paced hullabaloo to the bucolic countryside, comes our new foodie team, Abby Lutz & Shane Walsh.   A clothing designer and photographer respectively, this couple traded in their edgy Brooklyn address for a bit of paradise on a farm in rural Pennsylvania.  With a slower paced life now (though they still both work and turn out insanely gifted work), Abby and Shane have found themselves lingering in the garden and creating in the kitchen.  The result?  Mouth-watering, inventive concoctions crafted from the very food they grow.  Whatever is ready to be picked is what goes on the plate…  the very reason why they are The Accidental Gourmands.
